Ingredients
– 1 package of refrigerated pie crusts
– 2 medium apples, peeled and diced
– 1/2 cup brown sugar
– 1 tsp cinnamon
– 6 strips of cooked bacon, chopped
– 1 egg (for egg wash)
– 1 tbsp sugar (for topping)
– 1 tbsp flour (for dusting)
Instructions
1. 1. Preheat your oven to 375°F (190°C).
2. 2. In a large bowl, combine diced apples, brown sugar, and cinnamon. Mix well and fold in the chopped bacon.
3. 3. Roll out the pie crusts on a floured surface and cut them into small circles (about 4 inches in diameter).
4. 4. Place a spoonful of the apple-bacon mixture in the center of each circle.
5. 5. Fold the crust over the filling and crimp the edges to seal.
6. 6. Place the bombs on a baking sheet lined with parchment paper.
7. 7. Beat the egg and brush the mixture over each pie bomb, then sprinkle with sugar.
8. 8. Bake for 20-25 minutes or until golden brown.

Notes
These pie bombs can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
