These Spicy Thai Peanut Chicken Tacos are bursting with flavor, featuring tender chicken tossed in a spicy peanut sauce, topped with a crunchy slaw for the perfect balance of heat and crunch. Ideal for a quick weeknight meal or a fun taco night!
Ingredients
– 1 lb chicken breast, diced
– 1/4 cup peanut butter
– 2 tablespoons soy sauce
– 1 tablespoon honey
– 2 teaspoons sriracha sauce
– 1 tablespoon olive oil
– 1 cup shredded cabbage
– 1/2 cup shredded carrots
– 1/4 cup green onions, chopped
– 8 small corn tortillas
– Lime wedges for serving
Instructions
1. 1. In a bowl, mix together peanut butter, soy sauce, honey, and sriracha.
2. 2. Heat olive oil in a skillet over medium heat.
3. 3. Add diced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
4. 4. Pour the peanut sauce over the cooked chicken, stir well, and cook for another 2-3 minutes until heated through.
5. 5. In another bowl, combine shredded cabbage, carrots, and green onions.
6. 6. Warm the corn tortillas in a dry skillet or microwave.
7. 7. Assemble the tacos by adding the peanut chicken mixture and topping with the crunchy slaw.

Notes
For extra crunch, add chopped peanuts on top of the tacos.
Feel free to adjust the spiciness by adding more or less sriracha.
You can also substitute chicken with tofu for a vegetarian option.
