These Spicy Thai Bacon-Infused Shrimp Spring Rolls are a fusion of flavors, combining crispy bacon, succulent shrimp, and fresh vegetables wrapped in rice paper for a delicious appetizer or snack.
Ingredients
– 8 oz shrimp, peeled and deveined
– 4 slices of bacon, cooked and crumbled
– 1 cup carrots, julienned
– 1 cup cucumber, julienned
– 1 cup fresh mint leaves
– 1 cup fresh cilantro
– 8 rice paper wrappers
– 1/4 cup soy sauce
– 1 tablespoon chili garlic sauce
– Lime wedges for serving

Notes
For extra crunch, you can add sliced bell peppers or bean sprouts to the filling. Adjust the level of spiciness by adding more or less chili garlic sauce.
