Description

These Spicy Thai Bacon-Infused Shrimp Spring Rolls are a fusion of flavors, combining crispy bacon, succulent shrimp, and fresh vegetables wrapped in rice paper for a delicious appetizer or snack.

Ingredients

– 8 oz shrimp, peeled and deveined

– 4 slices of bacon, cooked and crumbled

– 1 cup carrots, julienned

– 1 cup cucumber, julienned

– 1 cup fresh mint leaves

– 1 cup fresh cilantro

– 8 rice paper wrappers

– 1/4 cup soy sauce

– 1 tablespoon chili garlic sauce

– Lime wedges for serving

Instructions

1.

2. 1. In a bowl, combine shrimp, crumbled bacon, carrots, cucumber, mint, and cilantro.

3. 2. Fill a shallow dish with warm water and soak one rice paper wrapper until soft, about 15-20 seconds.

4. 3. Lay the softened wrapper on a clean surface and place a small portion of the shrimp mixture in the middle.

5. 4. Fold the sides over the filling and roll tightly from the bottom up to form a spring roll. Repeat with remaining wrappers and filling.

6. 5. In a small bowl, mix soy sauce and chili garlic sauce to create a dipping sauce.

7. 6. Serve spring rolls with lime wedges and dipping sauce.

Notes

For extra crunch, you can add sliced bell peppers or bean sprouts to the filling. Adjust the level of spiciness by adding more or less chili garlic sauce.
