These Spicy Maple Glazed Chicken Tacos are a delicious blend of sweet and spicy flavors, topped with a refreshing avocado slaw. Perfect for a quick weeknight dinner or a fun taco night!
Ingredients
For the Chicken:
– 1 lb boneless, skinless chicken thighs
– 1/4 cup maple syrup
– 2 tbsp soy sauce
– 1 tbsp sriracha
– 1 tsp garlic powder
– 1 tsp smoked paprika
– Salt and pepper to taste
For the Avocado Slaw:
– 1 cup shredded green cabbage
– 1 cup shredded purple cabbage
– 1 ripe avocado, diced
– 1/4 cup cilantro, chopped
– Juice of 1 lime
– Salt and pepper to taste
For Serving:
– 8 small corn tortillas
– Lime wedges, for garnish
Instructions
1. 1. In a bowl, mix together maple syrup, soy sauce, sriracha, garlic powder, smoked paprika, salt, and pepper.
2. 2. Add the chicken thighs to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes.
3. 3. In a separate bowl, combine the green cabbage, purple cabbage, avocado, cilantro, lime juice, salt, and pepper to make the slaw.
4. 4. Heat a grill or skillet over medium-high heat and cook the marinated chicken for 6-8 minutes on each side, or until fully cooked.
5. 5. Once cooked, remove the chicken and let it rest for a few minutes before slicing.
6. 6. Warm the corn tortillas on the grill for about 30 seconds on each side.
7. 7. To assemble, place a few slices of chicken on each tortilla, top with avocado slaw, and garnish with lime wedges.
Notes
For extra heat, add more sriracha to the marinade. You can also substitute the chicken thighs for chicken breasts if preferred. Enjoy!
