Description

These Spicy Mango Chicken Tacos are bursting with flavor! Juicy chicken is marinated in a spicy mango sauce and topped with a refreshing cilantro lime slaw for the perfect street food experience.


Ingredients

– 1 lb chicken breast, diced

– 1 ripe mango, pureed

– 2 tbsp lime juice

– 1 tbsp chili powder

– 1 tsp cumin

– 1 tsp garlic powder

– Salt and pepper to taste

– 8 small corn tortillas

– 2 cups cabbage, shredded

– 1/2 cup cilantro, chopped

– 1/4 cup mayonnaise

– 1 tbsp honey

– 1 tbsp lime juice


Instructions

1. 1. In a bowl, mix the pureed mango, lime juice, chili powder, cumin, garlic powder, salt, and pepper.

2. 2. Marinate the diced chicken in the mango mixture for at least 30 minutes.

3. 3. In a separate bowl, combine shredded cabbage, chopped cilantro, mayonnaise, honey, and lime juice to make the slaw. Mix well and set aside.

4. 4. Heat a skillet over medium heat and cook the marinated chicken until fully cooked, about 7-10 minutes.

5. 5. Warm the corn tortillas in a separate pan or microwave.

6. 6. Assemble tacos by placing the cooked chicken in the tortillas and topping with cilantro lime slaw.

7. 7. Serve immediately and enjoy!


Notes

For an extra kick, add sliced jalapeños on top or serve with your favorite hot sauce.

These tacos can also be made with shrimp or tofu for a different twist!
