Ingredients

– 1 lb beef short ribs

– 2 tablespoons gochujang (Korean chili paste)

– 2 tablespoons soy sauce

– 1 tablespoon sesame oil

– 1 tablespoon honey

– 1 teaspoon garlic powder

– 1 teaspoon ginger powder

– 8 small corn tortillas

– 4 slices of bacon, cooked and crumbled

– 1 cup green cabbage, shredded

– 1/2 cup carrots, shredded

– 1/4 cup mayonnaise

– 1 tablespoon apple cider vinegar

– Salt and pepper to taste

– Fresh cilantro for garnish

Instructions

1.

2. 1. In a bowl, mix gochujang, soy sauce, sesame oil, honey, garlic powder, and ginger powder to create the marinade.

3. 2. Marinate the beef short ribs in the mixture for at least 30 minutes.

4. 3. Preheat a grill or skillet over medium-high heat. Cook the marinated beef for about 5-7 minutes on each side, or until nicely charred and cooked through.

5. 4. In a separate bowl, combine cabbage, carrots, bacon, mayonnaise, apple cider vinegar, salt, and pepper to create the bacon slaw.

6. 5. Warm the corn tortillas on a skillet until pliable.

7. 6. Slice the grilled beef into strips and place on warmed tortillas.

8. 7. Top with bacon slaw and garnish with fresh cilantro.

9. 8. Serve immediately and enjoy your Spicy Korean BBQ Tacos!

Notes

Adjust the spice level by increasing or decreasing the amount of gochujang. For a vegetarian option, substitute beef with grilled tofu or mushrooms.
