Ingredients
– 1 lb chicken breasts, diced
– 2 tablespoons olive oil
– 2 tablespoons chipotle in adobo sauce
– 1 teaspoon paprika
– 1 teaspoon cumin
– Salt and pepper to taste
– 8 small corn tortillas
– 1 cup shredded lettuce
– 1/2 cup diced tomatoes
– 1/4 cup diced red onion
– 1/4 cup chopped cilantro
– 1 avocado
– 1/4 cup sour cream
– Juice of 1 lime
