Description

These Smoky Maple Bourbon Ribs are a delightful combination of sweet and savory flavors, paired with a refreshing charred pineapple salsa that elevates the dish. Perfect for your next BBQ gathering!


Ingredients

2 racks of baby back ribs

1 cup maple syrup

1/2 cup bourbon

1/4 cup apple cider vinegar

2 tablespoons smoked paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon black pepper

1 teaspoon salt

1/2 teaspoon cayenne pepper

1 ripe pineapple, peeled and diced

1 red bell pepper, diced

1/4 cup red onion, diced

1/4 cup cilantro, chopped

Juice of 1 lime

Salt to taste


Instructions

2. Preheat your grill to medium heat (about 300°F).

3. In a bowl, whisk together maple syrup, bourbon, apple cider vinegar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper to make the marinade.

4. Place the ribs in a large dish and pour the marinade over them, making sure they are well-coated. Allow them to marinate for at least 1 hour, preferably overnight.

5. While the ribs are marinating, prepare the charred pineapple salsa. Grill the pineapple pieces on medium heat for about 5-8 minutes until charred. Remove and chop into small pieces.

6. In a mixing bowl, combine the grilled pineapple, red bell pepper, red onion, cilantro, lime juice, and salt. Set aside.

7. Remove the ribs from the marinade and place them on the grill. Cook for about 2-2.5 hours, turning occasionally and basting with the leftover marinade.

8. Once the ribs are tender and have a nice glaze, remove them from the grill and let them rest for 10 minutes before slicing.

9. Serve the ribs with the charred pineapple salsa on the side.

Notes

 

For extra tender ribs, cook them low and slow.

You can also add your favorite BBQ sauce during the last 30 minutes of grilling for an additional layer of flavor.

Feel free to adjust the spice level to your taste.
