These smoky chipotle bacon tacos are bursting with flavor and topped with a zesty avocado salsa for the perfect bite!
Ingredients
– 8 slices of bacon
– 1 tablespoon chipotle chili powder
– 1 teaspoon smoked paprika
– 1 teaspoon garlic powder
– 1/2 teaspoon salt
– 8 small corn tortillas
– 1 ripe avocado, diced
– 1/2 cup diced tomatoes
– 1/4 cup chopped red onion
– 1 lime, juiced
– Fresh cilantro, for garnish
Instructions
1. 1. Preheat a skillet over medium heat. Cook the bacon until crispy, then remove and drain on paper towels.
2. 2. In a small bowl, mix together the chipotle chili powder, smoked paprika, garlic powder, and salt.
3. 3. Once the bacon is cool, chop it into bite-sized pieces and toss it with the spice mixture.
4. 4. Warm the corn tortillas in a dry skillet for about 30 seconds on each side.
5. 5. Assemble the tacos by placing bacon on each tortilla.
6. 6. In another bowl, combine diced avocado, tomatoes, red onion, lime juice, and cilantro for the salsa.
7. 7. Top each taco with a generous amount of avocado salsa and serve immediately.
Notes
