Ingredients
4 lbs pork ribs
1 cup bourbon
1/2 cup apple cider vinegar
1/2 cup ketchup
1/4 cup maple syrup
1/4 cup brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon black pepper
1 teaspoon salt
1/2 teaspoon cayenne pepper
8 strips of bacon
Instructions
1. Preheat your grill to medium-low heat (about 250°F).
2. Prepare the ribs by removing the membrane from the back.
3. In a bowl, mix bourbon, apple cider vinegar, ketchup, maple syrup, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.
4. Coat the ribs generously with the marinade, cover, and let them marinate in the fridge for at least 2 hours or overnight.
5. Wrap the ribs in aluminum foil and place them on the grill. Cook for 2.5 to 3 hours.
6. After cooking, remove the ribs from the foil and brush them with additional marinade.
7. Wrap the bacon around the ribs, securing with toothpicks if necessary.
8. Grill the ribs uncovered for an additional 30-40 minutes, basting with the maple glaze, until the bacon is crispy and caramelized.
9. Let the ribs rest for 10 minutes before slicing and serving.
Notes
For an extra smoky flavor, use wood chips on your grill.
You can adjust the sweetness of the glaze by adding more or less maple syrup.
Pair these ribs with coleslaw and cornbread for a complete BBQ meal.
