Description

This Smashed Onion Mac and Cheese Casserole is a creamy, cheesy delight with the rich flavor of caramelized onions. Perfect for family gatherings or a comforting weeknight dinner!


Ingredients

– 8 oz elbow macaroni

– 2 tbsp olive oil

– 2 large onions, sliced

– 3 cups shredded sharp cheddar cheese

– 1 cup grated Parmesan cheese

– 4 cups milk

– 1/2 cup all-purpose flour

– 1 tsp garlic powder

– 1 tsp onion powder

– 1/2 tsp smoked paprika

– Salt and pepper to taste

– 1/2 cup breadcrumbs

– Fresh parsley for garnish


Instructions

1. 1. Preheat your oven to 350°F (175°C).

2. 2. Cook the macaroni according to package instructions until al dente. Drain and set aside.

3. 3. In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes.

4. 4. In a large saucepan, whisk together the milk and flour over medium heat until smooth. Gradually add in the cheddar cheese and Parmesan, stirring until melted and creamy.

5. 5. Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper.

6. 6. Combine the cooked macaroni with the cheese sauce and caramelized onions.
