Ingredients
1 lb pork tenderloin, sliced into strips
1 tablespoon Cajun seasoning
2 tablespoons olive oil
1 cup shredded cheddar cheese
1/2 cup breadcrumbs
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. 1. In a bowl, mix the pork strips with Cajun seasoning, salt, and pepper.
2. 2. Heat olive oil in a skillet over medium-high heat.
3. 3. Add the seasoned pork strips and cook until browned and cooked through, about 5-7 minutes.
4. 4. In a separate bowl, combine shredded cheddar cheese and breadcrumbs.
5. 5. Remove the pork from the skillet and reduce heat to medium.
6. 6. Sprinkle the cheese and breadcrumb mixture over the pork in the skillet.

Notes
For an extra kick, add more Cajun seasoning to taste.
