Ingredients
1 lb ground chicken
1/4 cup creamy peanut butter
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp lime juice
1 tbsp brown sugar
2 cloves garlic, minced
1 tsp ginger, minced
1/2 cup shredded carrots
1/2 cup chopped red bell pepper
1/4 cup chopped green onions
1 head of butter lettuce, leaves separated
Chopped peanuts and cilantro for garnish
Instructions
1. In a large skillet over medium heat, cook the ground chicken until browned and cooked through.
2. Add garlic and ginger, sauté for about 1 minute until fragrant.
3. Stir in peanut butter, soy sauce, fish sauce, lime juice, and brown sugar; mix well.
4. Add shredded carrots and red bell pepper, cook for an additional 2-3 minutes.
5. Remove from heat and stir in green onions.
6. To serve, spoon the chicken mixture into lettuce leaves and garnish with chopped peanuts and cilantro.
