Description

Start your day with this delicious savory sweet potato bacon breakfast skillet. The combination of crispy bacon, tender sweet potatoes, and fresh vegetables makes for a hearty and satisfying meal.


Ingredients

– 2 medium sweet potatoes, diced

– 4 slices of bacon, chopped

– 1 bell pepper, diced

– 1 small onion, diced

– 2 cloves garlic, minced

– 4 large eggs

– Salt and pepper to taste

– Fresh parsley, chopped (for garnish)


Instructions

1. 1. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside, leaving the drippings in the pan.

2. 2. Add the diced sweet potatoes to the skillet and cook for about 10 minutes, stirring occasionally until they begin to soften.
