Ingredients
4 large flour tortillas
4 slices of bacon
4 large eggs
1 cup shredded cheddar cheese
1/4 cup milk
Salt and pepper to taste
1 tablespoon olive oil
Chopped green onions (optional)
Instructions
1. 1. In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and drain on paper towels.
2. 2. In a bowl, whisk together the eggs, milk, salt, and pepper.
3. 3. In the same skillet, remove excess bacon grease, leaving about 1 tablespoon. Add olive oil if needed.
4. 4. Pour the egg mixture into the skillet and scramble until just set. Remove from heat.
5. 5. Lay out each tortilla and divide the scrambled eggs, crumbled bacon, and cheddar cheese evenly among them.
