Ingredients
Crust:
– 1 ½ cups graham cracker crumbs
– ½ cup unsalted butter, melted
– ¼ cup granulated sugar
– 1 teaspoon ground cinnamon
Cheesecake Filling:
– 16 oz cream cheese, softened
– 1 cup granulated sugar
– 1 cup pumpkin puree
– 3 large eggs
– 1 teaspoon vanilla extract
– 1 teaspoon ground cinnamon
– ½ teaspoon ground nutmeg
– ½ teaspoon ground ginger
– ¼ teaspoon salt
Instructions
1. 1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
2. 2. In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Mix until well combined.
3. 3. Press the mixture evenly into the bottom of the prepared baking pan to form the crust.
4. 4. In a large mixing bowl, beat the cream cheese until smooth.
5. 5. Add sugar, pumpkin puree, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until well combined and smooth.
6. 6. Pour the cheesecake filling over the crust and spread it evenly.
7. 7. Bake in the preheated oven for 35-40 minutes, or until the center is set.
8. 8. Allow the bars to cool at room temperature, then refrigerate for at least 4 hours before slicing.
