Description

Indulge in the zesty flavors of Pepperjack Pepper Chicken, a delightful dish featuring tender chicken breasts stuffed with spicy pepper jack cheese and infused with a bourbon kick. Perfect for a cozy dinner or impressing guests!


Ingredients

4 boneless, skinless chicken breasts

1 cup pepper jack cheese, shredded

1/2 cup bourbon

1/2 cup cream cheese, softened

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

1. Preheat the oven to 375°F (190°C).

3. In a bowl, mix together the pepper jack cheese, cream cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.

5. Cut a pocket into each chicken breast and stuff with the cheese mixture.

7. Season the outside of the chicken breasts with salt and pepper.

9. In a skillet, heat olive oil over medium-high heat. Sear each chicken breast until golden brown, about 4-5 minutes on each side.

11. Transfer the chicken to a baking dish and pour the bourbon over the top.

13. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through (internal temperature of 165°F or 74°C).

15. Let rest for a few minutes before serving. Garnish with fresh parsley.


Notes

For an extra kick, add diced jalapeños to the cheese mixture.

 

Serve with a side of roasted vegetables or a fresh salad for a complete meal.
