Description

Succulent, fall-off-the-bone BBQ ribs glazed with a sweet maple sauce, perfectly paired with creamy sweet potato mash. Ideal for summer grilling or a cozy family dinner.


Ingredients

– 2 racks of pork baby back ribs

– 1 cup maple syrup

– 1/2 cup apple cider vinegar

– 1/4 cup soy sauce

– 2 tablespoons Dijon mustard

– 2 tablespoons brown sugar

– 1 tablespoon smoked paprika

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– Salt and pepper to taste

– 2 large sweet potatoes

– 2 tablespoons butter

– 1/4 cup milk

– Salt to taste


Instructions

2. 1. Preheat your grill to medium heat (about 350°F).

3. 2. In a saucepan, combine maple syrup, apple cider vinegar, soy sauce, Dijon mustard, brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper. Simmer over medium heat for 10 minutes to thicken.

4. 3. Prepare the ribs by removing the silver skin and rubbing them with salt and pepper.

5. 4. Place the ribs on the grill and cook for 2 hours, turning occasionally.

6. 5. Brush the ribs generously with the maple glaze during the last 30 minutes of cooking.

7. 6. While the ribs are cooking, peel and chop the sweet potatoes. Boil them in salted water until tender, about 15 minutes.

8. 7. Drain the sweet potatoes and mash them with butter, milk, and salt to taste.

9. 8. Once the ribs are done, remove from the grill and let rest for 10 minutes before slicing.

10. 9. Serve the ribs with sweet potato mash on the side.


Notes

For extra flavor, marinate the ribs in the glaze overnight before grilling.

Feel free to adjust the sweetness of the glaze by adding more or less maple syrup.
