Description
This Maple Dijon Glazed Chicken and Brussels Bake features tender chicken thighs coated in a sweet and tangy maple Dijon glaze, roasted alongside Brussels sprouts for a delicious one-pan meal.
Ingredients
4 bone-in, skin-on chicken thighs
2 cups Brussels sprouts, halved
1/4 cup maple syrup
2 tablespoons Dijon mustard
2 tablespoons olive oil
1 tablespoon soy sauce
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Fresh parsley, for garnish
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, whisk together the maple syrup, Dijon mustard, olive oil, soy sauce, garlic powder, onion powder, salt, and pepper.
3. Place the chicken thighs in a large baking dish and pour half of the glaze over them.
4. Add the Brussels sprouts to the dish and drizzle with the remaining glaze.
5. Toss everything to coat well.
6. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the Brussels sprouts are tender.
7. Garnish with fresh parsley before serving.
Notes
For extra crispy skin, broil the chicken for the last 2-3 minutes of cooking.
Feel free to substitute the Brussels sprouts with your favorite vegetables.
