Description

A deliciously sweet and savory casserole made with sweet potatoes, maple syrup, and bourbon, topped with a crunchy pecan and brown sugar topping. Perfect for festive gatherings!


Ingredients

4 medium sweet potatoes, peeled and cubed

1/2 cup maple syrup

1/4 cup bourbon

1/2 cup milk

1/4 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1 cup chopped pecans

1/2 cup brown sugar

1/2 cup oats

1/4 cup all-purpose flour

1/4 cup melted butter for topping


Instructions

1. 1. Preheat oven to 350°F (175°C).

2. 2. Boil sweet potatoes in salted water until tender, about 15-20 minutes.

3. 3. Drain and mash sweet potatoes in a large bowl.

4. 4. Stir in maple syrup, bourbon, milk, melted butter, eggs, vanilla, cinnamon, nutmeg, and salt until smooth.

5. 5. Pour the sweet potato mixture into a greased 9×13 inch baking dish.

6. 6. In another bowl, combine chopped pecans, brown sugar, oats, flour, and melted butter for the topping.

7. 7. Sprinkle the topping evenly over the sweet potato mixture.

8. 8. Bake in the preheated oven for 30-35 minutes, until the topping is golden and crispy.

9. 9. Let cool for a few minutes before serving.


Notes

For a non-alcoholic version, omit the bourbon and replace it with additional maple syrup or apple juice.

Add mini marshmallows on top for extra sweetness if desired.
