Ingredients
2 cups warm water (110°F to 115°F)
1 packet active dry yeast (2 1/4 teaspoons)
1/4 cup granulated sugar
4 cups all-purpose flour
1/2 cup baking soda
1 large egg, beaten
1 tablespoon coarse salt
2 large onions, thinly sliced
2 tablespoons olive oil
2 cups shredded cheese (cheddar or your choice)
1 teaspoon dried thyme
1 teaspoon garlic powder
Instructions
1. Dissolve the yeast and sugar in warm water and let it sit for 5 minutes until frothy.
2. Add the flour and mix until a dough forms. Knead for 5 minutes until smooth.
3. Place the dough in a greased bowl, cover, and let rise for 1 hour.
4. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
5. In a pan, heat olive oil over medium heat and add the onions. Cook until caramelized, about 15 minutes.
6. Once the dough has risen, divide it into equal pieces and roll each piece into a long rope.
7. Shape each rope into a pretzel and place on the baking sheet.
8. In a large pot, boil water and baking soda. Boil each pretzel for 30 seconds and return to the baking sheet.
9. Brush the pretzels with beaten egg and sprinkle with coarse salt.
10. Bake for 12-15 minutes until golden brown. Remove from oven and let cool.
11. Top each pretzel with caramelized onions, cheese, thyme, and garlic powder. Return to the oven for 5 minutes until cheese is melted.
