Ingredients
4 medium-sized potatoes
1 cup nacho cheese sauce
1/2 cup sour cream
1/2 cup cooked bacon, crumbled
1/4 cup sliced jalapeños
1/4 cup chopped green onions
Salt and pepper to taste
1 cup shredded cheddar cheese
Instructions
1. 1. Preheat the oven to 425°F (220°C).
2. 2. Wash and scrub the potatoes thoroughly. Prick each potato with a fork several times.
3. 3. Bake the potatoes directly on the oven rack for 45-60 minutes, or until tender.
4. 4. Allow the potatoes to cool slightly, then cut them in half lengthwise and scoop out a bit of the flesh to create a small well.
5. 5. Place the potato halves on a baking sheet, season with salt and pepper, and fill each well with nacho cheese sauce.
6. 6. Top with shredded cheddar cheese, crumbled bacon, jalapeños, and green onions.
7. 7. Return to the oven and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
