Description

These Loaded Cheddar Bacon Ranch Potato Skins are the ultimate appetizer for any gathering! Crispy potato skins topped with melty cheddar cheese, crispy bacon, and a creamy ranch dressing, served with a spicy dip for an extra kick.


Ingredients

4 large russet potatoes

2 cups shredded sharp cheddar cheese

1 cup cooked and crumbled bacon

1/2 cup sour cream

1/4 cup ranch dressing

1 tablespoon chopped chives

1 teaspoon garlic powder

Salt and pepper to taste

1/2 cup mayonnaise

1 tablespoon hot sauce


Instructions

1. Preheat the oven to 400°F (200°C).

2. Wash and dry the potatoes, then prick them with a fork several times.

3. Bake the potatoes for 45-60 minutes, until tender.

4. Once baked, let them cool slightly, then cut each potato in half lengthwise.

5. Scoop out the insides, leaving about 1/4 inch of potato in the skins.

6. Brush the insides of the skins with olive oil and sprinkle with salt and pepper.

7. Return the skins to the oven and bake for an additional 10-15 minutes until crispy.

8. Remove from the oven and sprinkle the shredded cheese and crumbled bacon inside each skin.

9. Return to the oven for 5-7 minutes, until the cheese is melted and bubbly.

10. While the skins bake, mix together the sour cream, ranch dressing, chives, garlic powder, salt, and pepper in a bowl.

11. For the spicy dip, combine mayonnaise and hot sauce in a separate bowl.

12. Serve the loaded potato skins warm with the ranch dip and spicy dip on the side.
