Description
A creamy, cheesy, and loaded baked potato casserole topped with crispy bacon, perfect for a comforting meal.
Ingredients
4 large russet potatoes, peeled and diced
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup milk
1/4 cup butter, melted
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
6 slices bacon, cooked and crumbled
1/4 cup green onions, chopped
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a large pot, boil the diced potatoes until fork-tender, about 15 minutes. Drain and return to pot.
3. Add sour cream, cheddar cheese, milk, melted butter, garlic powder, onion powder, salt, and pepper to the potatoes. Mash until well combined.
4. Fold in half of the crumbled bacon and transfer the mixture to a greased 9×13 inch baking dish.
5. Top with remaining bacon and additional cheese if desired.
6. Bake in the preheated oven for 25-30 minutes, until bubbly and golden brown.
7. Remove from oven and sprinkle with chopped green onions before serving.
Notes
For extra flavor, try adding cooked sausage or different types of cheese. You can also top with additional herbs like parsley or chives.
