Description

This flavorful curry chicken recipe combines tender chicken pieces with a rich and aromatic curry sauce, perfect for serving over rice or with naan. It’s easy to prepare and packed with spices!


Ingredients

– 1.5 lbs chicken thighs, boneless and skinless

– 2 tablespoons vegetable oil

– 1 large onion, chopped

– 4 garlic cloves, minced

– 1 tablespoon ginger, minced

– 2 tablespoons curry powder

– 1 teaspoon turmeric

– 1 teaspoon cumin

– 1 teaspoon coriander

– 1 can (14 oz) coconut milk

– 1 cup chicken broth

– Salt and pepper to taste

– Fresh cilantro for garnish


Instructions

1. Heat the vegetable oil in a large pot over medium heat.

2. Add the chopped onion and sauté until translucent, about 5 minutes.

3. Stir in the garlic and ginger, and cook for another minute until fragrant.

4. Add the chicken thighs and cook until browned on all sides, about 5-7 minutes.

5. Sprinkle in the curry powder, turmeric, cumin, and coriander; stir to coat the chicken.

6. Pour in the coconut milk and chicken broth, and season with salt and pepper.

7. Bring to a simmer, cover, and let cook for 20-25 minutes until the chicken is cooked through.

8. Once done, shred the chicken with two forks and stir back into the sauce.

9. Serve over rice or with naan, and garnish with fresh cilantro.


Notes

For a spicier version, add chopped chili peppers or cayenne pepper.

You can use chicken breasts instead of thighs if preferred.

This dish pairs well with basmati rice or quinoa.
