Ingredients

Scale

1 (4-5 lb) pork roast

1/2 cup honey

23 jalapenos, diced (adjust to taste)

1 tbsp olive oil

1 tbsp garlic powder

1 tbsp onion powder

1 tbsp smoked paprika

Salt and pepper to taste

1/2 cup diced bell peppers (red, yellow, and green)

1/4 cup chopped fresh cilantro

Instructions

1. Preheat your oven to 300°F (150°C).

2.

3. In a small bowl, mix honey, diced jalapenos, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper to form a marinade.

4.

5. Rub the marinade all over the pork roast, ensuring it is well-coated.

6.

7. Place the pork roast in a roasting pan and cover it with aluminum foil.

8.

9. Roast in the preheated oven for 4-5 hours, or until the internal temperature reaches 190°F (88°C).

10.

11. Remove from the oven and let it rest for 15 minutes before shredding.

12.

13. While the pork is resting, mix the diced bell peppers and chopped cilantro in a bowl.

14.

15. Serve the pulled pork topped with the pepper crunch mixture.

Notes

For added heat, leave the seeds in the jalapenos.

This dish pairs beautifully with coleslaw or grilled corn.
