Ingredients
4 medium-sized bell peppers (red, yellow, or orange)
1 small pumpkin, peeled and diced
1 cup cooked quinoa
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
Salt and pepper to taste
Olive oil for drizzling
Fresh parsley for garnish
Instructions
1. Preheat your oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds.
3. In a large bowl, mix the diced pumpkin, cooked quinoa, mozzarella, Parmesan, garlic powder, onion powder, oregano, salt, and pepper.
4. Stuff the mixture into the hollowed bell peppers.
5. Place the stuffed peppers in a baking dish and drizzle with olive oil.
6. Cover with foil and bake for 25 minutes.
7. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is bubbly and golden.
8. Garnish with fresh parsley before serving.
