This Hearty Butternut Squash and Sage Casserole is a comforting dish perfect for chilly evenings. Roasted butternut squash is layered with creamy béchamel sauce, fresh sage, and topped with a crispy breadcrumb crust.
Ingredients
• 1 medium butternut squash, peeled and cubed
• 2 tablespoons olive oil
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 cup milk
• 2 tablespoons butter
• 2 tablespoons all-purpose flour
• 1/2 teaspoon ground nutmeg
• 1/4 cup fresh sage, chopped
• 1 cup breadcrumbs
• 1/2 cup grated Parmesan cheese
Instructions
1. 1. Preheat your oven to 400°F (200°C).
2. 2. Toss the cubed butternut squash with olive oil, salt, and pepper in a large bowl.
3. 3. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
4. 4. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
5. 5. Gradually whisk in the milk, nutmeg, and sage. Cook until the sauce thickens, about 5 minutes.
6. 6. In a large casserole dish, layer half of the roasted squash, followed by half of the béchamel sauce.
7. 7. Repeat the layers with the remaining squash and sauce, then top with breadcrumbs and Parmesan cheese.
8. 8. Bake in the preheated oven for 20-25 minutes until the top is golden and crispy.

• This casserole can be made ahead of time and stored in the refrigerator before baking.
