This heartwarming St. Patrick’s Day Bacon Casserole is a creamy, cheesy delight topped with crispy bacon. Perfect for breakfast or brunch gatherings.
Ingredients
– 8 slices of bacon, chopped
– 1 lb (450g) breakfast sausage
– 1 medium onion, diced
– 1 bell pepper, diced
– 6 large eggs
– 2 cups (480ml) milk
– 2 cups (200g) shredded cheddar cheese
– 1 teaspoon garlic powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 6 cups (180g) cubed bread (preferably day-old)
– 1/4 cup (60ml) chopped fresh parsley (for garnish)

2. 1. Preheat your oven to 350°F (175°C).
3. 2. In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the skillet.
4. 3. Add the sausage to the skillet and cook until browned. Drain excess fat.
5. 4. Add the onion and bell pepper to the skillet, cooking until softened.
6. 5. In a large bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper.
7. 6. Layer the cubed bread in a greased 9×13 inch baking dish.
8. 7. Pour the egg mixture over the bread, followed by the sausage mixture and half of the cheese.
9. 8. Sprinkle the remaining cheese and cooked bacon on top.
10. 9. Bake for 45-50 minutes or until the casserole is set and golden brown.
11. 10. Let it cool slightly, then garnish with fresh parsley before serving.
Notes
This casserole can be prepared the night before and refrigerated overnight. Just add an extra 10-15 minutes to the baking time if starting from the fridge.
