Ingredients
– 2 cups corn kernels (fresh or frozen)
– 1 cup cream cheese, softened
– 1 cup shredded cheddar cheese
– 1/2 cup sour cream
– 1/2 cup mayonnaise
– 1-2 jalapeños, diced (seeds removed for less heat)
– 1/4 cup green onions, chopped
– 1 tsp garlic powder
– 1 tsp paprika
– Salt and pepper to taste
– Tortilla chips for serving
Instructions
1. 1. Preheat your oven to 350°F (175°C).
2. 2. In a large mixing bowl, combine the cream cheese, sour cream, and mayonnaise until smooth.
3. 3. Add the corn kernels, shredded cheddar cheese, diced jalapeños, green onions, garlic powder, paprika, salt, and pepper. Mix well.
4. 4. Transfer the mixture to a baking dish and spread it evenly.
5. 5. Bake in the preheated oven for 25-30 minutes, or until bubbly and golden on top.
6. 6. Remove from the oven and let it cool slightly before serving.

Notes
– For a spicier dip, leave some seeds in the jalapeños.
– This dip can be made ahead of time and baked just before serving.
