A delicious and savory dish featuring tender chicken thighs seared in a garlic herb butter sauce, served alongside roasted sweet potatoes.
Ingredients
4 bone-in, skin-on chicken thighs
2 medium sweet potatoes, peeled and diced
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large oven-safe skillet, melt the butter over medium heat.
3. Add the minced garlic, thyme, rosemary, paprika, salt, and pepper to the melted butter. Stir well to combine.
4. Add the chicken thighs to the skillet, skin-side down, and sear for about 5-7 minutes until golden brown.
5. Flip the chicken thighs and add the diced sweet potatoes around them in the skillet.
6. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
7. Remove the skillet from the oven and let it rest for a few minutes before serving.
8. Garnish with fresh parsley and enjoy!
Notes
For extra flavor, marinate the chicken thighs in the garlic herb mixture for a few hours or overnight.
Feel free to substitute sweet potatoes with other root vegetables like carrots or parsnips.
Ensure the chicken skin gets crispy for the best texture.
