Ingredients
4 bone-in, skin-on chicken thighs
2 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
Salt and pepper to taste
1 tablespoon olive oil
Lemon wedges for serving
Instructions
1. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
2. In a large skillet, heat olive oil over medium-high heat.
3. Add the chicken thighs, skin-side down, and cook until the skin is crispy and golden brown, about 7-8 minutes.
4. Flip the chicken thighs over and add the butter, garlic, rosemary, and thyme to the skillet.
5. Spoon the melted butter over the chicken and cook for an additional 10-12 minutes, or until the internal temperature reaches 165°F (74°C).
6. Remove the chicken from the skillet and let it rest for 5 minutes before serving.
7. Serve with lemon wedges.
Notes
For extra flavor, marinate the chicken in the garlic and herbs for a few hours before cooking.
