A comforting skillet bake featuring tender pork roast seasoned with ranch spices and topped with a crispy Cajun crunch, perfect for a hearty family meal.
Ingredients
2 lbs pork roast, cubed
1 tablespoon ranch seasoning
1 tablespoon Cajun seasoning
2 tablespoons olive oil
1 onion, diced
2 bell peppers, diced
3 cloves garlic, minced
1 cup chicken broth
1 cup corn
1 cup shredded cheddar cheese
1 cup panko breadcrumbs
1 tablespoon parsley, chopped

2. Preheat your oven to 400°F (200°C).
3. In a large skillet, heat olive oil over medium-high heat. Season the pork cubes with ranch seasoning and Cajun seasoning, then brown them in the skillet.
4. Add the onion, bell peppers, and garlic to the skillet and sauté until softened, about 5 minutes.
5. Pour in the chicken broth and bring to a simmer. Stir in the corn and half of the cheddar cheese.
6. Sprinkle the remaining cheese on top, followed by the panko breadcrumbs.
7. Transfer the skillet to the oven and bake for about 15-20 minutes, until the top is golden and crispy.
8. Remove from the oven and garnish with fresh parsley before serving.
