Ingredients
4 boneless, skinless chicken breasts
1/2 cup pure maple syrup
1/4 cup soy sauce
2 tablespoons Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
4 medium sweet potatoes, diced
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon dried thyme
1 cup green beans, trimmed
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a bowl, whisk together maple syrup, soy sauce, Dijon mustard, garlic powder, onion powder, salt, and pepper.
3. Place chicken breasts in a baking dish and pour the marinade over them. Let it marinate for at least 30 minutes.
4. While the chicken is marinating, toss the diced sweet potatoes with olive oil, paprika, thyme, salt, and pepper. Spread them out on a baking sheet.
5. Roast the sweet potatoes in the oven for 20 minutes.
6. After 20 minutes, place the marinated chicken in the oven alongside the sweet potatoes.
7. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
8. In the last 10 minutes of cooking, add the green beans to the baking sheet with the sweet potatoes.
9. Remove everything from the oven and let it rest for a few minutes before serving.
Notes
For extra crispiness, broil the chicken for the last 2-3 minutes of cooking.
Feel free to add your favorite vegetables to the sweet potato medley.
