These Crispy Lemon Herb Chicken Thighs are marinated in a zesty lemon herb mixture, then roasted to perfection for a delicious and flavorful meal. Perfect for weeknight dinners or meal prep!
Ingredients
4 bone-in, skin-on chicken thighs
2 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon lemon zest
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
Fresh parsley for garnish
Instructions
1. 1. Preheat the oven to 425°F (220°C).
2. 2. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and black pepper.
3. 3. Place chicken thighs in a large resealable bag or bowl and pour marinade over them. Seal or cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
4. 4. Remove chicken from marinade and place on a baking sheet, skin side up.
5. 5. Roast in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
6. 6. Let rest for 5 minutes before serving. Garnish with fresh parsley.
Notes
For extra crispiness, broil the chicken for the last 2-3 minutes of cooking.
You can substitute fresh herbs for dried if preferred.
