Description

This Crispy Herb Chicken and Sweet Potato Hash is a delicious and hearty dish that combines tender chicken with crispy sweet potatoes and aromatic herbs. Perfect for a family dinner or a cozy meal.


Ingredients

– 2 large sweet potatoes, diced

– 1 lb chicken breasts, boneless and skinless

– 2 tablespoons olive oil

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– 1 teaspoon dried thyme

– 1 teaspoon paprika

– Salt and pepper to taste

– Fresh parsley, chopped (for garnish)

3. 2. In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic powder, onion powder, paprika, salt, and pepper. Spread them on a baking sheet in a single layer.

4. 3. Bake the sweet potatoes for 20-25 minutes until crispy and tender, stirring halfway through.

5. 4. While the sweet potatoes are baking, season the chicken breasts with thyme, salt, and pepper.
