Description

Crispy garlic herb chicken thighs roasted to perfection with seasoned potatoes. A hearty dish that’s perfect for any dinner.


Ingredients

4 bone-in, skin-on chicken thighs

2 cups baby potatoes, halved

4 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper to taste

1 teaspoon paprika


Instructions

1. Preheat the oven to 425°F (220°C).

2. In a large bowl, combine the olive oil, garlic, rosemary, thyme, paprika, salt, and pepper.

3. Add the chicken thighs and toss to coat well.

4. In another bowl, toss the halved baby potatoes with olive oil, salt, and pepper.

5. Place the chicken thighs and potatoes on a baking sheet.

6. Bake for 35-40 minutes or until the chicken is cooked through and the potatoes are golden and crispy.

7. Let rest for 5 minutes before serving.


Notes

For extra crispiness, broil the chicken for the last 2-3 minutes of cooking.

Serve with a side of green salad for a complete meal.
