Ingredients
– 2 cups cooked wild rice
– 1 lb boneless, skinless chicken breasts, diced
– 1 cup celery, diced
– 1 cup carrots, diced
– 1 cup onion, diced
– 2 cups chicken broth
– 1 cup heavy cream
– 1 cup frozen peas
– 2 teaspoons garlic powder
– 1 teaspoon onion powder
– 1 teaspoon dried thyme
– 1 teaspoon paprika
– Salt and pepper to taste
– 1 cup breadcrumbs
– 2 tablespoons olive oil

3. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned, about 5-7 minutes.
4. Add celery, carrots, and onion to the skillet, sauté until vegetables are soft, about 5 minutes.
5. Stir in the cooked wild rice, chicken broth, heavy cream, frozen peas, garlic powder, onion powder, thyme, paprika, salt, and pepper. Mix well.
6. Pour the mixture into a greased 9×13 inch baking dish.
7. In a small bowl, combine breadcrumbs with a drizzle of olive oil and mix well. Sprinkle breadcrumbs over the casserole.
8. Bake in the preheated oven for 30-35 minutes, or until bubbly and golden brown on top.
