Description

These Cranberry-Orange Cream Cheese Stuffed Muffins are a delightful fusion of sweet and tart flavors, perfect for breakfast or a snack. The cream cheese filling adds a rich and creamy texture that balances the zesty orange and tangy cranberries.


Ingredients

– 2 cups all-purpose flour

– 1 cup granulated sugar

– 1 tablespoon baking powder

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, softened

– 2 large eggs

– 1 cup milk

– 1 teaspoon vanilla extract

– Zest of 1 orange

– 1 cup fresh or frozen cranberries, coarsely chopped

– 8 oz cream cheese, softened

– 1/4 cup powdered sugar

– 1 teaspoon orange juice


Instructions

1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

2. In a large bowl, mix together the flour, sugar, baking powder, and salt.

3. In another bowl, beat the softened butter and sugar until creamy. Add eggs, milk, and vanilla extract, and mix until combined.

4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

5. Fold in the orange zest and chopped cranberries.

6. In a separate bowl, mix the softened cream cheese, powdered sugar, and orange juice until smooth.

7. Spoon a tablespoon of muffin batter into each muffin cup, add a dollop of the cream cheese filling, and then top with more muffin batter until cups are about 3/4 full.

8. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool before serving.


Notes

These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.

Feel free to substitute dried cranberries if fresh ones are not available.
