Description
Succulent chicken thighs glazed with a sweet and tangy cranberry maple sauce, served over creamy sweet potato mash. Perfect for a cozy dinner!
Ingredients
4 bone-in, skin-on chicken thighs
1 cup fresh or frozen cranberries
1/2 cup maple syrup
1 tablespoon Dijon mustard
1 teaspoon garlic powder
Salt and pepper to taste
2 large sweet potatoes
2 tablespoons butter
1/4 cup milk
Fresh parsley for garnish
Instructions
1. Preheat oven to 400°F (200°C).
2. In a saucepan, combine cranberries, maple syrup, Dijon mustard, garlic powder, salt, and pepper. Cook over medium heat until cranberries burst and sauce thickens, about 10 minutes.
3. Season chicken thighs with salt and pepper, then sear them skin-side down in a hot skillet until golden brown, about 5 minutes.
4. Flip the chicken thighs, pour the cranberry sauce over them, and transfer the skillet to the preheated oven. Bake for 25-30 minutes until chicken is cooked through.
5. While the chicken is baking, peel and chop sweet potatoes. Boil in salted water until tender, about 15 minutes.
6. Drain sweet potatoes and mash with butter, milk, salt, and pepper until creamy.
7. Serve chicken thighs on a bed of sweet potato mash, drizzled with extra cranberry sauce, and garnish with fresh parsley.
Notes
For a spicier kick, add a pinch of cayenne pepper to the cranberry sauce. You can also substitute chicken breasts if preferred, but adjust cooking time accordingly.
