Ingredients
2 medium sweet potatoes
1 cup brie cheese, diced
1/2 cup fresh cranberries
1/4 cup pecans, chopped
2 tablespoons maple syrup
1 tablespoon olive oil
Salt and pepper to taste
Fresh thyme for garnish
Instructions
1. 1. Preheat the oven to 400°F (200°C).
2. 2. Pierce the sweet potatoes with a fork and bake for 45-60 minutes, until soft.
3. 3. While the potatoes are baking, combine cranberries, pecans, maple syrup, olive oil, salt, and pepper in a bowl.
4. 4. Remove the sweet potatoes from the oven and let them cool slightly.
