These delicious Cranberry Apple Pie Cheesecake Bars combine the tartness of cranberry with the sweetness of apples and a creamy cheesecake layer, all on a buttery crust. Perfect for Thanksgiving!
Ingredients
For the Crust:
– 1 ½ cups all-purpose flour
– ½ cup granulated sugar
– ½ cup unsalted butter, melted
– 1/4 teaspoon salt
For the Cheesecake Layer:
– 16 oz cream cheese, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 tablespoon lemon juice
For the Apple-Cranberry Topping:
– 2 cups apples, peeled and diced
– 1 cup fresh cranberries
– ½ cup granulated sugar
– 1 teaspoon cinnamon
– 1 tablespoon cornstarch
– 1 tablespoon lemon juice
Instructions
1. 1. Preheat your oven to 350°F (175°C).
2. 2. In a mixing bowl, combine flour, sugar, melted butter, and salt. Mix until crumbly.
3. 3. Press the mixture into the bottom of a greased 9×13 inch baking dish to form the crust.
4. 4. In another bowl, beat the cream cheese and sugar until smooth. Add eggs, vanilla, and lemon juice, and mix until combined.
5. 5. Pour the cheesecake mixture over the crust and spread evenly.
6. 6. In a separate bowl, mix the diced apples, cranberries, sugar, cinnamon, cornstarch, and lemon juice.
7. 7. Spread the apple-cranberry mixture over the cheesecake layer.
8. 8. Bake for 45-50 minutes, or until the center is set and the edges are slightly golden.
9. 9. Allow to cool, then chill in the refrigerator for at least 4 hours before cutting into bars.

Notes
– These bars can be made a day ahead and stored in the refrigerator.
– Feel free to substitute with frozen cranberries if fresh ones are not available.
