These Chipotle Honey Bacon Quesadillas are the perfect combination of sweet and spicy, featuring crispy bacon and gooey cheese, making them an ideal appetizer for game day!
Ingredients
– 8 slices of bacon
– 1 cup shredded mozzarella cheese
– 1 cup shredded cheddar cheese
– 4 flour tortillas
– 2 tablespoons chipotle honey sauce
– 1 tablespoon olive oil
– Fresh cilantro, for garnish
– Sour cream, for serving
– Salsa, for serving

2. 1. In a large skillet, cook the bacon over medium heat until crispy, about 8-10 minutes. Remove and drain on paper towels, then chop into pieces.
3. 2. In the same skillet, add 1 tablespoon of olive oil and heat over medium-low.
4. 3. Place a tortilla in the skillet, and sprinkle half of the mozzarella and cheddar cheese on one half of the tortilla.
5. 4. Drizzle 1/2 tablespoon of chipotle honey sauce over the cheese, then sprinkle with chopped bacon.
6. 5. Fold the tortilla over to cover the filling and cook for about 2-3 minutes or until golden brown and the cheese is melted.
7. 6. Flip the quesadilla and cook for another 2-3 minutes on the other side.
8. 7. Remove from skillet and repeat with remaining tortillas and fillings.
9. 8. Slice into wedges and garnish with fresh cilantro. Serve with sour cream and salsa.

– For an extra kick, add some diced jalapeños.
– You can use any kind of cheese you prefer!
– These quesadillas can be made ahead of time and reheated in the oven.
