Ingredients
– 2 cups cooked rice
– 2 cups broccoli florets, steamed
– 1 cup cheddar cheese, shredded
– 1 cup cream of mushroom soup
– 1/2 cup milk
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1 cup crushed crackers (like Saltines or Ritz)
– 2 tablespoons butter, melted
Instructions
1. 1. Preheat your oven to 350°F (175°C).
2. 2. In a large mixing bowl, combine the cooked rice, steamed broccoli, cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper. Mix well.
3. 3. Transfer the mixture to a greased 9×13 inch baking dish and spread it evenly.
4. 4. In a separate bowl, mix the crushed crackers with melted butter until well combined.
5. 5. Sprinkle the buttery cracker mixture evenly over the casserole.
6. 6. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.

Notes
For a twist, you can add cooked chicken or ham for extra protein. Feel free to use different types of cheese for varied flavors. This casserole can be made ahead of time and stored in the refrigerator; just increase the baking time if baking from cold.
