Ingredients
– 6 strips of bacon
– 4 large eggs
– 1 cup shredded cheese (cheddar or your choice)
– 1 medium bell pepper, diced
– 1 small onion, diced
– 2 cups baby spinach
– Salt and pepper to taste
– Fresh parsley for garnish
