These Caramel Apple Cheesecake Bars are a delicious fusion of creamy cheesecake and sweet, tart apples topped with gooey caramel. Perfect for fall gatherings or a sweet treat any time of the year!
Ingredients
For the crust:
– 1 ½ cups graham cracker crumbs
– ⅓ cup granulated sugar
– ½ cup unsalted butter, melted
For the cheesecake filling:
– 16 oz cream cheese, softened
– ½ cup granulated sugar
– 2 large eggs
– 1 tsp vanilla extract
– 2 cups peeled and chopped apples (Granny Smith or Honeycrisp)
– 1 tsp cinnamon
For the caramel topping:
– 1 cup caramel sauce
– Sea salt, for garnish (optional)

3. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
4. In another bowl, beat the softened cream cheese and sugar together until smooth and creamy.
5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
6. Fold in the chopped apples and cinnamon until evenly distributed.
7. Pour the cheesecake mixture over the crust and spread it evenly.
8. Bake for 30-35 minutes, or until the center is set and the edges are lightly golden.
9. Allow the bars to cool completely, then refrigerate for at least 2 hours.
