Description
A spicy twist on classic deviled eggs, these Cajun Jalapeno Deviled Eggs are topped with a creamy chipotle mayo for an irresistible appetizer that packs a punch.
Ingredients
6 large eggs
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon Cajun seasoning
1 jalapeno, finely chopped
Salt and pepper to taste
1/4 cup chipotle mayo (store-bought or homemade)
Chopped fresh parsley for garnish
Instructions
1. 1. Place eggs in a saucepan and cover with cold water. Bring to a boil over medium heat.
2. 2. Once boiling, cover the pan, remove it from heat, and let sit for 12 minutes.
3. 3. After 12 minutes, transfer eggs to an ice bath to cool for 5 minutes.
4. 4. Peel the eggs and slice them in half lengthwise.
5. 5. In a bowl, mash the yolks with mayonnaise, Dijon mustard, Cajun seasoning, jalapeno, salt, and pepper until smooth.
6. 6. Spoon or pipe the yolk mixture back into the egg whites.
7. 7. Drizzle with chipotle mayo and garnish with chopped parsley.
8. 8. Serve immediately or refrigerate until serving.
Notes
For a milder version, remove the seeds from the jalapeno.
You can also adjust the amount of Cajun seasoning to taste.
