Description

These Blackened Cajun Deviled Eggs Rolls are a delicious twist on a classic appetizer, featuring a spicy, creamy filling and a crunchy pepper topping.


Ingredients

6 large eggs

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

Salt and black pepper to taste

1/4 cup diced bell peppers (red, green, yellow)

1 tablespoon olive oil

1 tablespoon fresh parsley, chopped

1 tablespoon lemon juice

1 package of soft tortillas


Instructions

1. 1. Hard boil the eggs by placing them in a pot of water, bringing it to a boil, then covering and removing from heat. Let them sit for 12 minutes.

2. 2. Once cooked, plunge the eggs into cold water to cool. Peel the shells once cool.

3. 3. Cut the eggs in half lengthwise and scoop the yolks into a mixing bowl.

4. 4. Add mayonnaise, Dijon mustard, Cajun seasoning, smoked paprika, salt, and black pepper to the yolks. Mix until smooth.

5. 5. Spread a layer of the egg yolk mixture on each tortilla, then sprinkle with diced bell peppers and parsley.

6. 6. Roll the tortillas tightly and slice into pinwheels.

7. 7. Drizzle with lemon juice before serving. Enjoy!


Notes

For extra heat, add more Cajun seasoning to the yolk mixture.

Use different colored bell peppers for a vibrant presentation.

These rolls are best served fresh but can be refrigerated for up to 2 hours before serving.
