Description
Delicious sweet potatoes stuffed with tender brisket and crispy bacon, perfect for Game Day gatherings.
Ingredients
4 large sweet potatoes
2 cups cooked brisket, shredded
1 cup cooked bacon, chopped
1/2 cup shredded cheddar cheese
1/4 cup sour cream
1/4 cup green onions, chopped
Salt and pepper to taste
Olive oil for drizzling
Instructions
1. 1. Preheat oven to 400°F (200°C).
2. 2. Wash and poke holes in sweet potatoes with a fork.
3. 3. Drizzle with olive oil, sprinkle with salt, and place on a baking sheet.
4. 4. Bake sweet potatoes for 45-50 minutes, or until tender.
5. 5. While potatoes are baking, mix brisket, bacon, cheddar cheese, sour cream, and green onions in a bowl.
6. 6. Once sweet potatoes are done, let them cool slightly, then slice them open.
7. 7. Fill each sweet potato with the brisket and bacon mixture.
8. 8. Return to the oven for an additional 10 minutes to melt the cheese.
9. 9. Remove from oven, garnish with extra green onions if desired, and serve.
Notes
Feel free to add your favorite BBQ sauce to the brisket mixture for extra flavor!
You can prepare the brisket a day ahead to save time on Game Day.
